

Baked Chocolate Ganache

Ingredients
- 5.3 oz Lindt EXCELLENCE 70% Cocoa
- 2.6 oz butter, use good quality for a delicious flavor
- 1 egg
- 1 egg yolk
- 1.2 oz granulated sugar
- pinch of fleur de sel
Method

Line the loaf pan with parchment paper and preheat the oven to 375 deg F

Gently melt together the chocolate and the butter

Set aside

In a large bowl, combine the egg, egg yolk, sugar, salt, and tonka bean if using

Whisk the egg and sugar mixture until light and at least double in volume

Gently fold the chocolate mixture into the egg-sugar mixture until well combined

The mixture should remain as light as possible

Place the mixture into the prepared pan, smooth the surface, and place in the oven

Bake for 10 minutes

The edges should start to firm, with the center remaining soft

Allow to cool slightly

Cut portions with a clean straight-edged knife
