Summer Berry Pudding Recipe

Summer berries add sweetness to this layered pudding, which can be made the night before for an easy grab-n-go breakfast.
Ingredients
- Chia Pudding:
- 1 Cup Milk
- 1/2 Cup Low fat vanilla yogurt
- 2.5 Tb Chia seeds
- 1/2 Tsp Vanilla extract
- 2 Tsp Honey
- Smoothie:
- 1/2 Cup Low fat vanilla yogurt
- 1/4 Cup Fresh orange juice
- 2/3 Cup Frozen mixed berries
- 3/4 Cup Summer berry compote or your favorite fruit jam
- 2 Tsp Toasted coconut flakes
- 2 Squares Lindt EXCELLENCE 70% Cocoa Dark Chocolate Bar
Method

To make the chia pudding, whisk the milk with the yogurt, chia seeds, vanilla and honey until well combined. Cover and refrigerate for 4 hours.

To make the smoothie, blend together the yogurt, orange juice and 3/4 of the frozen berries, until smooth.

Spoon the berry compote or jam into the bottom of 2 glasses. Top with the thickened chia pudding and then the berry smoothie.

Garnish with the remaining frozen berries, coconut flakes and top with a square of Lindt EXCELLENCE 70%.

Tip: Alternately, use your favorite dairy-free beverage such as coconut milk if desired.
