- 1 cup (250 mL) chocolate cookie crumbs
- 1 cup (250 mL) quick-cooking rolled oats
- 1/3 cup (75 mL) dried cranberries

Instructions
- Line 8-inch (20 cm) square baking dish with parchment paper, with paper overhanging edges.
- Chop 1 1/2 Lindt chocolate bars and transfer to heatproof bowl set over saucepan of barely simmering water (bowl should not touch water). Add coconut oil. Stirring occasionally, heat until chocolate and coconut oil are melted and mixture is smooth.
- Remove bowl from heat. Stir in cookie crumbs, rolled oats, cranberries and honey until well combined. Scrape mixture into prepared pan and smooth top. Refrigerate oat bars for 1 hour or until well chilled and set.
- Finely chop remaining 1/2 chocolate bar and transfer to microwave-safe bowl. Stirring every 20 seconds, microwave on MEDIUM power for 1 minute or until chocolate is smooth and melted. Drizzle melted chocolate over oat bars. Let stand until chocolate drizzle is set. Cut into 12 bars to serve.
- TIP: Tip: Substitute dried cranberries with dried cherries or blueberries if preferred.
