What is Dark Chocolate and How is it Made?

What is Dark Chocolate?

Dark chocolate is a type of chocolate made with high levels of cocoa. It is known for its deep and sophisticated flavor profile, which introduces a subtle bitterness to the muted chocolate sweetness. Dark chocolate typically looks darker in color than white and milk chocolate, and is also firmer in texture. 

What is in Dark Chocolate?

Dark chocolate ingredients are simple, yet they create a rich and complex flavor. The key ingredients of dark chocolate are:

  • Cocoa mass: This is also called cocoa liquor or chocolate liquor made from roasted and crushed cocoa beans after the husk has been removed. This acts as one of the main ingredients.  
  • Cocoa butter: Cocoa butter is the natural fat extracted from cocoa beans. It helps make the texture smoother and creamier and is also one of the main ingredients.

Does Dark Chocolate Contain Dairy?

Yes, some dark chocolate can contain dairy products. Certain dark chocolate recipes can also contain milk powder or the purest form of butter. However, most of our EXCELLENCE percentage chocolates, where cocoa is the star, do not contain any dairy products. 

What Do the Percentages on Dark Chocolate Mean?

The percentages you see on chocolate labels are cocoa percentages. They represent the percentage of the ingredients in the chocolate that come from cocoa beans (such as cocoa solids or cocoa butter). Percentages for different types of chocolate include:  

  • Dark chocolate: Typically range from 50 to 100%. They have the highest cocoa percentages compared to white and milk chocolates, with a less sweet and more bitter flavor profile.  
  • Milk chocolate: Generally 30-50%. Milk chocolates tend to have lower percentages than dark chocolate. This is mainly due to less cocoa content and the presence of milk solids.  
  • White chocolate: Between 20-40%. This percentage represents just cocoa butter, as white chocolate contains no cocoa solids (unlike dark chocolate).  

Cocoa percentage is the most significant for dark chocolate because cocoa is the main ingredient, meaning the percentage gives you a real sense of its flavor strength and sweetness level. In white and milk chocolate, the flavor is influenced more by milk and sugar, so cocoa content is less of a focus. How is Dark Chocolate Made?

The methods and techniques for making dark chocolate often vary between chocolatiers. For example, at Lindt after harvesting, the cocoa beans are fermented and dried in the country of origin. The cocoa beans also undergo vigorous quality testing while still in the country of origin. We also steam clean the cocoa nibs, which are then roasted, applying a process we have specially developed, with the roasting time and temperature perfectly aligned in order to achieve the desired aroma.  

 

Although Master Chocolatiers use specific techniques to prioritize high-quality, the standard method for making dark chocolate generally involves the following steps:  

  1. The process begins with the cacao fruits, which are harvested from the cacao plant when ready and ripe. Then, the fruits are cut open so the cacao beans inside can be scooped out.  
  2. The cacao beans are then left out to dry and ferment. They are then roasted to develop and deepen their flavors.  
  3. Once roasted, the beans are cracked and winnowed. This process involves cracking open each bean to remove the shell and retrieve the cocoa nibs inside.  
  4. Next, the cocoa nibs are ground to create the cocoa mass. A portion of this cocoa mass is then pressed and broken down further to produce cocoa butter.  
  5. The freshly extracted cocoa mass and cocoa butter are mixed with sugar and any other flavorings or optional additions.  
  6. The chocolate blend is then put through a refiner where rollers break down particles to ensure a smooth texture.  
  7. This mixture then undergoes a process called conching, where it is mixed and aerated very slowly and over heat for hours or even days.  
  8. The final step is tempering. The chocolate is further heated and then cooled to stabilize the cocoa butter. This gives dark chocolate its glossy finish and firm snap.
