Baked Chocolate Ganache

Makes one small 19 cm loaf tin. 4-6 portions.

  • Line the loaf pan with parchment paper and preheat the oven to 375 deg F
  • Gently melt together the chocolate and the butter
  • Set aside
  • In a large bowl, combine the egg, egg yolk, sugar, salt, and tonka bean if using
  • Whisk the egg and sugar mixture until light and at least double in volume
  • Gently fold the chocolate mixture into the egg-sugar mixture until well combined
  • The mixture should remain as light as possible
  • Place the mixture into the prepared pan, smooth the surface, and place in the oven
  • Bake for 10 minutes
  • The edges should start to firm, with the center remaining soft
  • Allow to cool slightly
  • Cut portions with a clean straight-edged knife
